The albacore or albacore (Thunnus alalunga) is one of the most valued fish within the tunidos. Its meat is characterized by being white and a milder flavor than the rest of tunidos.
Catches are made from July to September, which is normally called the bonito coast, in which many small boats make their unloadings in the small ports of northern Spain.
Once the fish is selected, it is taken to the factory fresh for its traditional production, making the belly as the main and exceptional part of the bonito.
Bonito del Norte or albacore tuna, belongs to the group of blue fish and is an excellent source of proteins of high biological value, vitamins and minerals. Low in saturated fat and contains a high content of Omega 3 (anti-cholesterol).
